1.Peel bananas and cut into ½ inch thick slices.
2.Heat a skillet over low heat.
3.Drop the butter in the pan. Let it melt.
4.Add the brown sugar and stir to combine the two together.
5.Throw in the chopped bananas and give the skillet a few good shakes so as to coat them in the sauce.
6.Deglaze with the rum so that the alcohol rises into a flame and is evaporated.
7.Drop in the pistachios or the unsalted slivered almonds. Mix it with the sauce.
8.Add the raisins and gently toss the skillet to mix in everything.
9.Plate the warm banana foster in a bowl.
10.Top with the jackfruit ice cream and serve.
