Iowa Corn Relish

Ingredients
  Sweet corn ear 20
  Chopped green pepper 1 Cup (16 tbs)
  Chopped sweet red pepper 1 Cup (16 tbs)
  Chopped onion 1 1⁄4 Cup (20 tbs)
  Chopped celery 1 Cup (16 tbs)
  Sugar 2 Cup (32 tbs)
  Mustard seed 1 1⁄2 Tablespoon
  Salt 2 Tablespoon
  Celery seeds 1 Teaspoon
  Turmeric 1 Teaspoon
  White vinegar 1 Quart
Directions

Cook corn in boiling salted water for 5 minutes; plunge into cold water.
Cut kernels from cobs; measure 2 1/2 quarts.
Combine all ingredients; simmer for 20 minutes.
Pack into hot sterilized pint jars, leaving 1 inch space.
Vinegar solution must cover vegetables.
Adjust lids.
Process for 5 minutes at 5 pounds pressure in canner or for 15 minutes in boil- ing water bath.
