Southern Honey Cake
|Sugar||7 Cup (112 tbs)|
|Salad oil||1 Cup (16 tbs)|
|Honey||1 Cup (16 tbs)|
|Flour||2 1⁄2 Cup (40 tbs), sifted|
|Baking powder||1 Teaspoon|
|Pineapple juice||1⁄4 Cup (4 tbs)|
|Pecans||1⁄2 Cup (8 tbs), chopped|
Combine sugar, eggs, oil and honey; blend thor- oughly.
Beat mixture until thick.
Combine dry ingre- dients; sift 3 times.
Combine pineapple juice and 1 /4 cup water; bring to boil.
Stir in soda.
Add juice mix- ture alternately with dry ingredients to egg mixture.
Stir in vanilla and pecans.
Pour into lightly greased waxed paper-lined 10-inch tube pan.
Bake at 325 degrees for 1 hour and 15 minutes.
Remove from oven; let cool in pan on rack.
