Creole Black-Eyed Peas
|Chopped celery||1 Cup (16 tbs)|
|Chopped green peppers||1 Cup (16 tbs)|
|Chopped onions||1 Cup (16 tbs)|
|Black eyed peas||1 Can (10 oz) (No. 303)|
|Tomatoes||1 Can (10 oz) (No. 303)|
Fry bacon until crisp; drain.
Simmer celery, green peppers and onions in drippings until tender.
Crumble bacon; combine with peas and tomatoes.
Blend tomato mixture with onion mixture; season with salt and pepper.
Simmer, covered, for 20 min- utes longer.
