San Francisco Cioppino - A Spicy Fish Stew

Ingredients
  Onion 2 , diced
  Garlic clove 2 , chopped finely
  Fennel bulb 1 , chopped
  Fresh parsley 1 Bunch (100 gm), chopped finely
  Butter stick 1 1⁄2
  Tomato 2 Pound
  Basil 1 Tablespoon
  Oregano 1⁄2 Teaspoon
  Thyme 1⁄2 Teaspoon
  Bay leaves 2
  White wine 1 1⁄2 Cup (24 tbs)
  Water 1 Cup (16 tbs)
  Chicken broth 2 Cup (32 tbs)
  Shrimp 1⁄2 Pound
  Scallop 4
  Crab 6 Ounce
  Mussel 2 Cup (32 tbs) (Optional)
Directions

MAKING

1.  In a pot, melt butter over medium high heat. Add the onion, garlic, fennel, parsley. Stir and cook till the vegetables are tender. 

2.  Add in the tomatoes, basil, oregano, thyme and bay leaves. Pour in the white wine, water and chicken broth, bring to a simmer.

3.  Add in all the sea food and allow to cook until all mussels open up. Discard the ones which remain closed.

 

SERVING

4.  Ladle in to bowls and serve with some ciabatta bread.
