Snapper With Creole Sauce
|Red snapper||6 Pound|
|Garlic||4 Clove (20 gm)|
|Cooking oil||3⁄8 Cup (6 tbs)|
|Canned tomatoes||30 Ounce|
|Hot sauce||1⁄2 Teaspoon|
"Fry bacon slices until crisp; remove from skillet.
Grease snapper inside and out with small amount of bacon drippings; rub in salt and pepper.
Bake at 350 degrees for 30 minutes.
Saute celery, onions, green peppers and garlic in remaining bacon drippings and cooking oil.
Add tomatoes, hot sauce, thyme and oregano.
Pour over snapper; bake for 10 to 15 min-utes longer.
Garnish with lemon slices and parsley."
