Baked Fish Creole
|Frozen cod fillets/Other fillets||16 Ounce, thawed and cut into bite size pieces (1 package)|
|Canned tomatoes||16 Ounce (1 can)|
|Onion||1 Medium, diced|
|Green pepper||1 Medium, diced|
|Garlic powder||1⁄4 Teaspoon|
|Uncooked regular long grain rice||3⁄4 Cup (12 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Minced parsley||2 Tablespoon|
|Hot pepper sauce||1⁄4 Teaspoon|
1) Preheat oven to 375° F.
2) Take a 2 quart casserole and combine all ingredients in it, stirring to break up the tomatoes.
3) Cover and bake for about 1 1/4 hours or until rice and fish turn tender, stirring just once after 45 minutes.
4) Transfer to a platter decorate with lemon wedges and serve immediately.
