Seafood Gumbo With Brown Rice
|Olive oil||2 Tablespoon|
|Onions||2 Large, chopped|
|Garlic||2 Clove (10 gm), minced|
|Green pepper||1 , chopped|
|Clam juice||1 Pint|
|Frozen okra/1 pound fresh okra||10 Ounce (1 Packet)|
|Black pepper||1 Teaspoon|
|Medium shrimp/Scallops / oyster /crab legs etc||1⁄2 Pound, shelled and deveined|
|Brown rice/Millet||2 Cup (32 tbs)|
|Green scallions||1 Bunch (100 gm), sliced|
1.Add kettle on stove, and add olive oil. Heat enough to warm it.
2.Now add the garlic,onions and green peppers. Saute till onions are translucent
3.Pour clam juice, sprinkle herbs and add water to the pot.Let it boil. Then cover and simmer for 30 minutes
4.Add the okra, seafood and black pepper and simmer for additional 10 minutes.
5.Once done, taste and adjust seasoning.
6.To make brown rice and millet, take a pan and add 2 cups of water. Let it boil.
7.Add 1/2 cup brown rice and 1/2 cup millet
8.Stir and bring to a boil again, reduce heat, cover and steam for 45 minutes.Once grains are fluffy it is ready
9.It is ready to serve with green onions for garnish
10 Add the millet and rice in shallow bowls, pour soup over it and serve hot
