Seafood Newburg

Ingredients
  Butter 4 Tablespoon
  Flour 2 Tablespoon
  Light cream 2 Cup (32 tbs)
  Cooked salmon 1 1⁄2 Cup (24 tbs), cubed
  Cooked halibut 1 1⁄2 Cup (24 tbs), cubed
  Kosher salt 1 Teaspoon
  Paprika 1⁄8 Teaspoon
  Sherry 3 Tablespoon
  Egg yolks 3
Directions

MAKING
1) In the top of a double boiler, melt in some butter
2) Add in the flour and slowly add in 1 cup of cream and stir continuously
3) Stir the mixture till a boiling pot
4) Add in the salmon, halibut, salt, paprika and the sherry
5) Place this bowl over some hot water and cook for 5 minutes
6) In a bowl, add the egg yolks
7) Using an electric beater, beat together the egg yolks and remaining cream
8) Add this to the fish and cook till thickened

SERVING
9) Serve the fish on toast warmed
