Southern Savory Carrot Soup
|Onion||1 Medium, chopped|
|Carrots||4 , scraped and coarsely chopped|
|Chicken broth||4 Cup (64 tbs)|
|Lemon rind strip||2 Inch (1 Number)|
|Minced fresh savory/Dried whole savory - 1 teaspoon||1 Tablespoon|
|Curry powder||1 Teaspoon|
|Dry sherry||3 Tablespoon|
1 In a large skillet, melt butter.
2 Saute onion until tender.
3 Add in the next 8 ingredients.
4 Cover and lower the heat.
5 Simmer for 20 minutes or until carrots are tender.
6 Into container of electric blender, pour half of the mixture.
7 Process until smooth.
8 Transfer into a bowl or pitcher.
9 Repeat with the remaining mixture.
10 Blend in the sherry.
11 Cover and place in the refrigerator and chill.
12 Serve, garnished with carrot strips (optional)
