Southern Burnet Celery Soup
|Celery stalks||6 , finely chopped|
|Green onions||6 , finely chopped|
|Potatoes||3 Medium, peeled and cubed|
|Chopped burnet/2 teaspoons dried whole burnet||2 Tablespoon (Use Fresh)|
|Whipping cream||3 Tablespoon|
|Burnet leaves||4 (Fresh)|
1 In a large saucepan, add the first 5 ingredients.
2 Simmer for about 30 minutes.
3 In a blender, pour half of the mixture.
4 Process for 30 seconds.
5 Pass through a sieve.
6 Repeat the process with the remaining mixture.
7 Return to the saucepan.
8 Add in salt, pepper, whipping cream, and butter.
9 Heat thoroughly without boiling.
10 Stir occasionally.
11 Place in the refrigerator and chill before serving.
12 Serve, garnished with sliced celery and burnet leaves (optional)
