Southern Burnet Celery Soup

Ingredients
  Celery stalks 6 , finely chopped
  Green onions 6 , finely chopped
  Potatoes 3 Medium, peeled and cubed
  Milk 1 Quart
  Chopped burnet/2 teaspoons dried whole burnet 2 Tablespoon (Use Fresh)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Whipping cream 3 Tablespoon
  Butter/Margarine 1 Tablespoon
  Burnet leaves 4 (Fresh)
Directions

MAKING
1 In a large saucepan, add the first 5 ingredients.
2 Simmer for about 30 minutes.
3 In a blender, pour half of the mixture.
4 Process for 30 seconds.
5 Pass through a sieve.
6 Repeat the process with the remaining mixture.
7 Return to the saucepan.
8 Add in salt, pepper, whipping cream, and butter.
9 Heat thoroughly without boiling.
10 Stir occasionally.
11 Place in the refrigerator and chill before serving.

SERVING
12 Serve, garnished with sliced celery and burnet leaves (optional)
