Southern Mixed Herb Vinegar
|Chopped fresh rosemary||1⁄2 Cup (8 tbs)|
|Chopped fresh thyme||1⁄2 Cup (8 tbs)|
|Shallots||4 , thinly sliced|
|Fresh parsley sprig||1 , chopped|
|White vinegar||3 3⁄4 Cup (60 tbs) (Of 5% Acidity)|
1 In a wide-mouth glass jar, place the first 5 ingredients
2 In a medium saucepan, put the vinegar.
3 Bring to a boil.
4 Pour the vinegar over herbs.
5 Cover with a metal lid and secure tightly.
6 Allow to stand at room temperature for 2 weeks.
7 Strain the vinegar into decorative jars.
8 Discard the herb residue.
9 Add in the additional sprigs of fresh rosemary and thyme (optional)
10 Seal the jars using an airtight lid.
11 Serve as desired.
