Kentucky Bourbon Pie
|Eggs||2 , slightly beaten|
|Sugar||1 Cup (16 tbs)|
|All-purpose flour||1⁄2 Cup (8 tbs)|
|Butter||1⁄2 Cup (8 tbs), melted and cooked|
|Chopped pecans||1 Cup (16 tbs)|
|Semi-sweet chocolate morsels||6 Ounce (1 Package)|
|Vanilla extract||1 Teaspoon|
|Unbaked 9 inch pastry shell||1|
|Whipping cream||1 Cup (16 tbs)|
|Sifted powdered sugar||1⁄4 Cup (4 tbs)|
1 Preheat the oven to 350°F.
2 In a medium mixing bowl, add the first 4 ingredients.
3 Beat with an electric mixer just until blended.
4 Stir in pecans, chocolate morsels, and vanilla.
5 In the pastry shell, pour the filling.
6 Bake for 45 to 50 minutes.
7 Meanwhile, in a bowl, beat whipping cream and bourbon until foamy.
8 Gradually add in the powdered sugar, and beat until soft peaks form.
9 Serve warm along with whipped cream.
