1 Cut the pineapple into quarters, lengthwise.
2 Gently scoop out the pulp, reserving the shells about 1/4 to 1/2 inch thick.
3 Set aside.
4 Cut pineapple pulp into bite-size pieces, just enough to measure 1 cup.
5 Discard the cores; reserving the remaining pineapple for other uses.
6 In a bowl, mix 1 cup pineapple and the remaining ingredients.
7 Toss gently.
8 Transfer the mixture into the reserved pineapple shells.
9 Serve at once.
