Sardine Coast o' Maine Salad

This typical Sardine Coast o' Maine Salad is the best healthy and tasty combination to any meal. Try this easy and simple recipe for Sardine Coast o' Maine Salad; this happens to be my personal favorite!
  Salt To Taste
  Pepper To Taste
  Unflavored gelatin 1 Tablespoon
  Cold water 1⁄4 Cup (4 tbs)
  Boiling water 1⁄2 Cup (8 tbs)
  Vinegar 1⁄4 Cup (4 tbs)
  Creamy cottage cheese 1 Pint
  Crumbled bleu cheese 1⁄4 Cup (4 tbs)
  Mayonnaise 1 Cup (16 tbs)
  Onion 1 Small, chopped
  Minced parsley 1 Tablespoon
  Horseradish 2 Tablespoon
  Celery seed 1⁄8 Teaspoon
  Grated lemon rind 1 Tablespoon
  Grated and drained cucumber 1⁄2 Cup (8 tbs)
  Sardines 8 Ounce, broken (Drained)

Soften gelatin in cold water; dissolve in boiling water.
Add vinegar and fold in cheeses and mayonnaise.
Add remain- ing ingredients and mix well.
Season to taste with salt and pepper.
Turn mixture into oiled mold and chill until firm, about 4 hours.
Turn out on serving plate.
If desired, garnish with onion rings, tomato slices and extra sardines.
For a party effect, use molded fish as top garnish.
Serve with horse- radish, mayonnaise and greens.
