Sardine Coast o' Maine Salad
|Unflavored gelatin||1 Tablespoon|
|Cold water||1⁄4 Cup (4 tbs)|
|Boiling water||1⁄2 Cup (8 tbs)|
|Vinegar||1⁄4 Cup (4 tbs)|
|Creamy cottage cheese||1 Pint|
|Crumbled bleu cheese||1⁄4 Cup (4 tbs)|
|Mayonnaise||1 Cup (16 tbs)|
|Onion||1 Small, chopped|
|Minced parsley||1 Tablespoon|
|Celery seed||1⁄8 Teaspoon|
|Grated lemon rind||1 Tablespoon|
|Grated and drained cucumber||1⁄2 Cup (8 tbs)|
|Sardines||8 Ounce, broken (Drained)|
Soften gelatin in cold water; dissolve in boiling water.
Add vinegar and fold in cheeses and mayonnaise.
Add remain- ing ingredients and mix well.
Season to taste with salt and pepper.
Turn mixture into oiled mold and chill until firm, about 4 hours.
Turn out on serving plate.
If desired, garnish with onion rings, tomato slices and extra sardines.
For a party effect, use molded fish as top garnish.
Serve with horse- radish, mayonnaise and greens.
