Ever Ready Waldorf Salad

Ingredients
  Canned pineapple 20 Ounce (1 can)
  Eggs 3 , slightly beaten
  Sugar 3⁄4 Cup (12 tbs)
  Lemon juice 1⁄3 Cup (5.33 tbs)
  Salt 1⁄4 Teaspoon
  Celery 3⁄4 Cup (12 tbs)
  Apples 3 , unpeeled, diced
  Coarsely chopped walnuts 3⁄4 Cup (12 tbs)
  Heavy cream 1 1⁄2 Cup (24 tbs), whipped
Directions

MAKING
1) Into a bowl, drain the pineapple and reserve about 3/4 cup of the canned juice
2) Mix together the eggs sugar, lemon juice and salt
3) Over a low heat, cook the egg mixture till it thicken stirring continuously
4) Tip in the pineapple, celery, apples and nuts
5) Fold in the whipped cream
6) Place the mixture into a 9 x 5 x 3 inch square pan and place in the freezer to chill
SERVING
7) Onto a plate lined with lettuce leaves, place the salad and garnish with dollops of salad dressing and a carved apple
