Southern Bbq Chicken and Rice
|Water||1 1⁄2 Cup (24 tbs)|
|Converted rice||1 Cup (16 tbs) (UNCLE BEN'S Brand)|
|Barbecue sauce||1 Cup (16 tbs), divided|
|Skinless bone in chicken breasts||4|
|Frozen corn on the cob||3 (1 package, 6 half ears)|
1 In a large skillet, combine water, rice, 3/4 cup barbecue sauce and chicken.
2 Bring to a boil.
3 Cover and lower the heat.
4 Simmer for 25 minutes.
5 Add in the corn and continue cooking for 15 to 20 minutes or until the chicken is no longer pink in center.
6 Spoon the remaining 1/4 cup barbecue sauce over chicken.
7 Remove from the heat.
8 Allow to stand for 5 minutes or until the liquid is absorbed.
9 Serve hot.
