Creole Jambalaya Orleans

Ingredients
  Butter 1 Tablespoon
  Flour 1 Tablespoon
  Cooked ham 1 Cup (16 tbs)
  Green pepper 1⁄4 Cup (4 tbs), chopped
  Tomatoes 2 Cup (32 tbs), cooked
  Tomato juice 1 1⁄4 Cup (20 tbs)
  Shrimp 1 Pound, cleaned
  Onion 1 , thinly sliced
  Garlic 1 Clove (5 gm), minced
  Salt 2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Parsley sprigs 1 , chopped
  Thyme leaves 1⁄8 Teaspoon
  Bay leaf 1
  Parboiled rice 1 Cup (16 tbs)
Directions

MAKING
1) Into a heavy skillet, dab in the butter
2) Add in the flour, ham and green pepper, saute and stir well for 5minutes
3) Add in the tomatoes, tomato juice, shrimp, onion, garlic, parsley, bay leaf, and the thyme leaf
4) Bring the mixture to a gentle simmer
5) Tip in the rice, cover with the lid and cook till the rice is tender
6) Remove the bay leaf and cool the rice completely
7) Place the cooled rice into containers, close them firmly and freeze
8) Thaw the rice partially before serving
9) Bake the rice into a 2 quart casserole for 1 hour at 400 F with 1/3 cup water poured onto it

SERVING
10) Serve the rice warm
