Indiana Baked Beans

Ingredients
  Firmly packed brown sugar 1 Cup (16 tbs)
  Salt 2 Tablespoon
  Prepared mustard 3 1⁄2 Teaspoon
  Ketchup 2 Cup (32 tbs)
  Molasses 1 Cup (16 tbs)
  Onion 1 1⁄2 Cup (24 tbs), finely chopped
  Salt pork 3⁄4 Pound, sliced
Directions

MAKING
1) Into a kettle soak the beans overnight
2) Bring them to a boil and simmer 2 minutes
3) Remove from the hear and allow to rest with a lid on
4) In the same water, simmer the beans till tender
5) Mix together the sugar, salt, mustard, ketchup, molasses and onion
6) Add the beans and bring the mixture to a gentle boil
7) Into a casserole pour the beans
8) Mix into it the salt pork slices
9) Bake in the oven for 5 hours at 300 F
10) Into the casserole, add boiling water to keep it from becoming too dry
11) Thaw the mixture before serving
12) On the top of a double boiler, heat the mixture or bake the mixture for 45 minutes at 400 F

SERVING
13) Serve hot
