Hawaiian Shrimp Salad
|Cooked shrimp||1 Cup (16 tbs)|
|Celery||1⁄2 Cup (8 tbs), diced|
|Cucumber||1⁄4 Cup (4 tbs)|
|Lemon juice||3 Teaspoon|
|Mayonnaise||1⁄2 Cup (8 tbs)|
Wash pineapple and cut in halves lengthwise.
Scoop out centers; remove core and dice pulp.
To the diced pineapple add shrimp, celery, cucumber and lemon juice.
Chill in refrigerator about 1/2 hour.
Toss lightly with mayonnaise and refill pineapple shells.
Garnish with additional mayonnaise.
