|Frying chicken||3 Pound|
|Milk||1⁄3 Cup (5.33 tbs)|
|Cracker crumbs||3⁄4 Cup (12 tbs)|
|Flour||1⁄4 Cup (4 tbs)|
|Corn meal||1 Tablespoon|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Olive oil/Salad oil||1⁄4 Cup (4 tbs)|
Dip cleaned chicken pieces in egg and milk beaten together then in a combination of cracker crumbs, flour, corn meal salt and paprika.
Heat butter and salad oil, and brown chicken thoroughly on all sides.
Turn heat very low.
Flick a little water over chicken with your fingers.
Cover and cook until tender about 30 minutes.
