Hot Cucumber Slaw

Ingredients
  Cucumbers 2
  Salt 1 Teaspoon
  Cayenne pepper 1⁄4 Teaspoon
  Soy sauce 1 Tablespoon
  Water 1 Tablespoon
  Artificial sweetener 1⁄8 Teaspoon (To Equal 1 Teaspoon)
  Vinegar 1 Teaspoon
Directions

GETTING READY
1. Peel the cucumber, seed and shred.

MAKING
2. In a bowl, place cucumber and season with salt.
3. Cover and let it stand for 1-2 hours.
4. Drain all water.

FINALISING
5. In a bowl, mix cayenne pepper, soy sauce, water, sweetener and vinegar.

SERVING
6. Just before serving, pour some dressing over cucumber.
7. Toss lightly and serve.
