Shrimps Creole

Ingredients
  Bacon fat/Other shortening 1⁄4 Cup (4 tbs)
  Minced onions 1 Cup (16 tbs)
  Minced green pepper 1⁄2 Cup (8 tbs)
  Tomatoes 4 Medium, peeled and chopped
  Fish stock/Consomm´┐Ż 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Cayenne 1 Dash
  Herb bouquet 1 (Consisting Of Parsley, Crumbled Dried Thyme, And Bay Leaf)
  Uncooked shelled shrimp 2 Pound (Or Raw)
Directions

MAKING
1 In a pan, melt bacon fat and cook onion and green pepper in it.
2 Add in tomatoes, consomme, salt, cayenne, and herb bouquet.
3 Cover and simmer for 40 minutes, stirring occasionally.
4 Remove the herbs and discard.
5 Add in the shrimps.
6 Simmer gently for another 6 minutes.
7 Add salt and pepper if required.

SERVING
8 Serve with rice.
