Southwestern Beef & Beans
|Dried pinto beans||1 Pound|
|Cold water||6 Cup (96 tbs)|
|Salt pork||1⁄2 Pound, cut up|
|Lean chuck steak||1 Pound, cut into 1-inch cubes|
|Red chili pepper/1/2 teaspoon crushed red pepper||1|
|Onion||1 Medium, chopped|
|Garlic||2 Clove (10 gm), minced|
|Canned tomato paste||6 Ounce (1 Can)|
|Chili powder||1 1⁄2 Tablespoon|
|Cumin seed||1 Teaspoon|
|Marjoram leaves||1⁄2 Teaspoon|
Soak beans in water overnight.
Brown salt pork in skillet or slow-cooking pot with browning unit.
In slow-cooking pot, combine soaked beans (with water), browned pork, and remaining ingredients.
Cover and cook on low for 9 to 10 hours.
Makes 8 servings.
