Red Pepper Slaw

Ingredients
  Red bell peppers 3 Small, 1 whole, 2 thinly sliced
  Green cabbage head 1⁄2 Medium, finely shredded
  Onion 1 Small, thinly sliced
  Sliced sour gherkins/Other pickles 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm), minced
  Mayonnaise 1⁄3 Cup (5.33 tbs)
  White wine vinegar 2 Teaspoon
  Ground black pepper To Taste
  Salt To Taste
Directions

1. Roast the whole red pepper directly over a gas flame or under the broiler, turning, until charred all over, about 5 minutes. Place the pepper in a paper bag and set aside for 10 minutes to steam. When cool enough to handle, peel the pepper and remove the core, seeds and ribs. Slice into thin strips.
2. In a large bowl, combine the cooked and uncooked red peppers with the cabbage, onion, gherkins, garlic, mayonnaise and vinegar. Season with salt and black pepper to taste. Cover and refrigerate until ready to serve. (The can be made up to 1 day ahead.)
