Low Calorie Waldorf Salad
|Reduced calorie mayonnaise||1⁄4 Cup (4 tbs)|
|Reduced fat sour cream||1⁄4 Cup (4 tbs)|
|1% milk||1⁄4 Cup (4 tbs)|
|Lemon juice||6 Tablespoon|
|Black pepper||1⁄2 Teaspoon|
|Red apples||3 Large, unpeeled (Delicious)|
|Bite size mixed salad greens||4 Cup (64 tbs) (Bibb, Boston, Curly Leaf Lettuce, Romaine)|
|Celery stalks||4 , chopped to make 2 cups|
|Chopped walnuts||1⁄2 Cup (8 tbs), lightly toasted|
1. In a small bowl, whisk together the mayonnaise, sour cream, milk, 3 tablespoons of the lemon juice, and the pepper until combined.
2. Cut the apples into quarters, then core and slice them lengthwise 1/8 inch thick. Place in a medium-size bowl and toss with the remaining 3 tablespoons of lemon juice.
3. Line a platter with the salad greens. Arrange the apples, celery, and walnuts on top, drizzling the dressing over them as you go. Serve as a first course.
