Five Vegetable Slaw

|Finely shredded green cabbage||4 Cup (64 tbs)|
|Thinly sliced red bell pepper||1⁄2 Cup (8 tbs)|
|Thinly sliced green bell pepper||1⁄2 Cup (8 tbs)|
|Cucumber||1⁄2 Medium, peeled, halved lengthwise, seeded and thinly sliced|
|Scallions||3 , thinly sliced on the diagonal|
|Mayonnaise||1⁄3 Cup (5.33 tbs)|
|Cider vinegar||1 Tablespoon|
|Freshly ground black pepper||1⁄4 Teaspoon|
In a large bowl, toss together the cabbage, red and green bell peppers, cucumber and scallions.
Mix in the mayonnaise, vinegar, salt and black pepper.
Cover and refrigerate for up to 2 days before serving.
