Five Vegetable Slaw

Ingredients
  Finely shredded green cabbage 4 Cup (64 tbs)
  Thinly sliced red bell pepper 1⁄2 Cup (8 tbs)
  Thinly sliced green bell pepper 1⁄2 Cup (8 tbs)
  Cucumber 1⁄2 Medium, peeled, halved lengthwise, seeded and thinly sliced
  Scallions 3 , thinly sliced on the diagonal
  Mayonnaise 1⁄3 Cup (5.33 tbs)
  Cider vinegar 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
Directions

In a large bowl, toss together the cabbage, red and green bell peppers, cucumber and scallions.
Mix in the mayonnaise, vinegar, salt and black pepper.
Cover and refrigerate for up to 2 days before serving.
