Southern cornmeal muffins are great to serve at the snack time and kids love them. They are not too sweet or savoury. Southern cornmeal muffins are a nice variation to the regular sweet muffins.
Self rising cornmeal
3 Cup (48 tbs)
Self rising flour
1 Cup (16 tbs)
1⁄2 Cup (8 tbs)
1 1⁄2 Cup (24 tbs)
1)In a bowl, mix first 5 ingredients and then add buttermilk and mix to get consistency of pancake batter.
2)Take hot well-greased muffin tins and fill until ½ full.
3)Bake at 450 degrees for 20 minutes or until browned.
4)Serve the southern cornmeal muffin at the tea time or pack as lunch for kids.
