Hawaiian Pancake Roll-ups

Hawaiian Pancake Roll-ups are a very simple way to present breakfast. Roll up the normal pancakes and transform them into something yummy. These Hawaiian pancake roll ups are good to serve to the kids and make it as a take away food too.
Ingredients
  All purpose flour 2 Cup (32 tbs), sifted
  Sugar 1⁄4 Cup (4 tbs)
  Baking powder 1 Teaspoon
  Salt 1 Teaspoon
  Shortening 1⁄4 Cup (4 tbs)
  Lemon rind 1 Teaspoon, grated
  Eggs 4 , well beaten
  Milk 2 Cup (32 tbs)
  Brown sugar 1 Cup (16 tbs), firmly packed
  Cornstarch 1 Tablespoon
  Unsweetened pineapple juice 1 Cup (16 tbs)
  Butter 1 Tablespoon
  Lemon juice 1 Tablespoon
  Crushed pineapple 1 Can (10 oz)
Directions

MAKING
1)In a mixing bowl, sift together flour, sugar, baking powder and salt.
2)Cut in shortening and add lemon rind.
3)In a bowl, mix beaten eggs and milk and add to dry ingredients, mixing until smooth.
4)In a saucepan, mix brown sugar and cornstarch.
5)Fold in pineapple juice, and butter and boil about 3 minutes.
6)Add lemon juice and keep syrup hot.
7)Take a greased griddle and pour batter into it and spread out batter as thin as possible.
8)Turn when bubbles appear on the surface and edges of pancake are dry, and brown the other side.
9)Spread top of pancake with crushed pineapple and roll up quickly.

SERVING
10)Serve immediately with the hot sauce.
