Creole Sauce

Ingredients
  Chopped onion 2 Tablespoon
  Minced green pepper 1⁄4 Cup (4 tbs)
  Butter 2 Tablespoon
  Cooked tomatoes 1 1⁄2 Cup (24 tbs)
  Salt 1⁄4 Teaspoon
  Pepper To Taste (Few Grains)
  Sherry 2 Tablespoon
Directions

1. Cook onion and green pepper in butter until tender.
2. Add tomatoes and cook 2 minutes.
3. Add seasonings and sherry.
4. For thicker sauce, blend 1 tablespoon flour with butter and add tomatoes gradually, stirring until thickened.
