Sardine Coast O' Maine Salad

Ingredients
  Unflavored gelatin 1 Tablespoon
  Cold water 3⁄4 Cup (12 tbs)
  Boiling water 1⁄2 Cup (8 tbs)
  Vinegar 3⁄4 Cup (12 tbs)
  Cottage cheese 1 Pint
  Bleu cheese 3⁄4 Cup (12 tbs), crumbled
  Mayonnaise 1 Cup (16 tbs)
  Onion 1 Small, chopped
  Parsley 1 Tablespoon, minced
  Horseradish 2 Tablespoon
  Celery seed 1⁄8 Teaspoon
  Lemon rind 1 Tablespoon, grated
  Cucumber 1⁄2 Cup (8 tbs), grated and drained
  Sardines 8 Ounce, drained (2 Can)
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) Soak gelatin in cold water.

MAKING
2) Dissolve the gelatin in boiling water.
3) Add vinegar, mayonnaise, and cheese.
4) Stir in the remaining ingredients and mix well.
5) Sprinkle salt and pepper.
6) Take mold greased with oil, turn the mixture, and chill for 4 hours or until firm.

SERVING
7) Take a serving plate, and serve.
8) If desired, garnish with horseradish, greens, mayonnaise, onion rings, tomato wedges, and extra sardines.
