Maine Sardine Summer Salad

Ingredients
  Sardines 8 Ounce
  Cottage cheese 8 Ounce
  Mayonnaise 3 Tablespoon
  Sour cream 3 Tablespoon
  Chili sauce 2 Tablespoon
  Celery 3⁄4 Cup (12 tbs), minced
  Hard cooked eggs 2 , coarsely chopped
  Lemon rind 1 Tablespoon, grated
  Ripe tomatoes 4 Large
  Hard cooked eggs 2 , sieved
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) Drain the sardines, mash one can and reserve the other can.
2) Cut tomatoes into 4 crosswise slices.

MAKING
3) Combine the mashed sardines with cottage cheese, lemon peel, mayonnaise, chili sauce, cream, celery, eggs, and pepper.
4) Spoon the sardine fillings in between tomato slices.

SERVING
5) Take a serving dish and arrange the tomato slices on bed of greens.
5) Spoon the sardine mixture over the top and garnish with sieved eggs.
6) Sprinkle the remaining can of sardines on top and serve.
