Blueberry And Honey Cobbler

Ingredients
  Blueberries 1 Pound
  Arrowroot 1 Tablespoon
  Nutmeg 1⁄2 Tablespoon
  Coriander 1⁄2 Tablespoon
  Grated lemon rind 1 Tablespoon
  Honey 3⁄4 Cup (12 tbs)
  Water 2 Tablespoon
  Corn meal 1⁄4 Cup (4 tbs)
  Soy flour 1⁄3 Cup (5.33 tbs)
  Rice flour 1⁄3 Cup (5.33 tbs)
  Lima bean flour 1⁄3 Cup (5.33 tbs)
  Baking powder 1 Tablespoon
  Mineral salt 1⁄2 Tablespoon
  Oil 1⁄3 Cup (5.33 tbs)
Directions

GETTING READY
1) Preheat oven to 300°.

MAKING
2) Use an 8" x 8" x 2" pan to combine first 7 ingredients.
3) Place the pan over heat to simmer for 2 minutes.
4) In another bowl, add the next 7 ingredients to combine well.
5) Sprinkle this mixture on top of the fruit mixture.
6) Place inside oven to bake for 20 minutes until top is browned.

SERVING
7) Serve the cobbler warm by spreading honey on top, if you wish.
