Fruit Tartlets

Ingredients
  All purpose flour 2 Cup (32 tbs)
  Salt 1⁄4 Teaspoon
  Butter 1⁄2 Cup (8 tbs)
  Egg 1
  Sugar 1 Pinch
  Fruit 1 Cup (16 tbs)
  Butter 2 Tablespoon
  All purpose flour 1⁄4 Cup (4 tbs)
  Sugar 1 Tablespoon
  Egg yolk 1
  Milk 2⁄3 Cup (10.67 tbs)
  Vanilla extract 1⁄4 Teaspoon
  Apricot jam 5 Tablespoon
Directions

MAKING
1. In a bowl, sift flour and salt, rub butter in, add the egg and sugar and stir it all well
2. Form a soft dough with it, add water if necessary and chill the dough for twenty minutes
3. Roll the dough out and line twelve muffin pans, greased and dusted with flour, with it
4. Bake it in the oven for twenty minutes at 325° F; cool on a wire rack when done
5. For the filling, melt the butter in the saucepan, add flour and sugar and stir well
6. In another bowl, beat egg yolk with milk and strain into the flour mixture; allow to come to a boil and then turn the heat off
6. Stir around for a minute and add vanilla extract; allow to cool and add to the pastry cases
7. Decorate with drained fruit and brush on top with glaze of sieved and heated apricot jam

8. Serve as per your tastes
