Honeyed Rhubarb Charlotte
|Rhubarb||1 Bunch (100 gm)|
|Bread slices||4 (thin slices)|
|Sugar||1⁄2 Cup (8 tbs)|
|Melted butter||1 Tablespoon|
|Water||1⁄2 Cup (8 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
Wash rhubarb and cut into 1" lengths.
Bring sugar, honey, water, orange rind and juice to the boil.
Add rhubarb and simmer gently until soft.
Cut the bread into finger lengths, brush with melted butter.
Put half into a greased pie dish.
Add the rhubarb and cover with the other half of bread.
Dredge with castor sugar and dust with nutmeg.
Cook in a moderate oven for 30 minutes.
Serve cold with custard.
