Waldorf Salad With Cooked Dressing
|Dry mustard||1 Teaspoon|
|Red pepper||1 Dash|
|Egg yolks||2 , slightly beaten|
|Milk||3⁄4 Cup (12 tbs)|
|Vinegar||1⁄4 Cup (4 tbs)|
|Oleo||1 1⁄2 Teaspoon|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Chopped pitted dates||1⁄2 Cup (8 tbs)|
|Diced apples||2 Cup (32 tbs)|
|Chopped pecans/Walnuts||1⁄2 Cup (8 tbs)|
Mix dry ingredients for cooked dressing.
Cook in double boiler over hot, not boiling water until thick, stirring constantly.
Add vinegar and oleo.
Makes one cup.
Combine celery, dates and cooked dressing.
Fold in apples and nuts before serving.
