Seafood Tomato Gumbo
|Red onions||6 Large, finely chopped|
|Bell peppers||1 1⁄2 , finely chopped|
|Celery ribs||4 , finely chopped|
|Frozen okra||30 Ounce, sliced (3 Packages)|
|Italian tomatoes||1 Can (10 oz)|
|Tomato sauce||1 Cup (16 tbs)|
|Flour||1⁄2 Cup (8 tbs)|
Saute red onions, bell peppers and celery in shortening.
Saute separately okra until it is dry and not slimy.
Add Italian tomatoes, tomato sauce and all vegetables to okra.
Then add 3 or 4-quarts water.
Make a roux of shortening and flour.
Add a little water to this and add to okra and vegetable mixture.
Peel and add shrimp.
Cook slowly for several hours.
About 30 minutes before serving, add crabmeat.
