Mama's Seafood Gumbo

Ingredients
  White onions 3 Large, chopped
  Garlic 3 Clove (15 gm), minced
  Oil 3 Tablespoon
  Frozen okra 1 Cup (16 tbs) (1 Package)
  Tomatoes 1 Can (10 oz)
  Oil 6 Tablespoon
  Flour 6 Tablespoon
  Shrimp 2 Pound, deveined
  Water 2 Quart
  Chopped green onions and tops 1 1⁄2 Cup (24 tbs)
  Parsley 1 Cup (16 tbs), chopped
  Bay leaves 4
  Thyme 2 Teaspoon
  Salt To Taste
  Tabasco 6 Dash
  Crabmeat 1 Can (10 oz)
  Oysters 16 Ounce (1 Jar)
Directions

Saute white onions and garlic in 3 tablespoons oil.
Add okra and smother until okra becomes tender.
Add tomatoes.
Cook for about 15 minutes.
Make a dark roux using 6 tablespoons flour and 6 tablespoons oil.
Add 2-quarts water to roux.
Stir constantly.
Add okra, onion, garlic and tomato mixture.
Add chopped green onions and parsley, bay leaves and thyme.
Add black pepper, red pepper, onion, salt and Tabasco.
Let cook on medium heat for 1 1/2 to 2 hours.
Add shrimp and cook until pink.
Add crabmeat and oysters.
Allow to cook 3 to 5 minutes longer.
Serves 8 to 10.
