Pina Colada Squares

Ingredients
  Unflavored gelatin 4 Tablespoon (4 Envelopes)
  Unsweetened pineapple juice 2 1⁄2 Cup (40 tbs), heated to boiling
  Liquid sweetener 1 Tablespoon
  Vanilla ice milk 1 Cup (16 tbs)
  Flaked coconut 2 Tablespoon
  Rum extract 1⁄8 Teaspoon (Flavoring)
Directions

In medium bowl, mix gelatin with sweetener, add hot juice and stir until gelatin is completely dissolved.
Stir in remaining ingredients.
Blend thoroughly.
Pour into 8 or 9 inch square baking pan and chill until firm.
Cut into 1 inch squares.
