Healthy American Chop Suey

Ingredients
  Lean pork 1⁄4 Pound, finely cut
  Onion 1 , sliced
  Soup stock 2 Cup (32 tbs)
  Uncooked rice 1⁄2 Cup (8 tbs)
  Celery 1 1⁄2 Pound, cut into strips (1 Bunch)
  Salt 1⁄2 Tablespoon
  Green pepper 1 , cut into strips
  Mushrooms 1 Cup (16 tbs)
Directions

Cut fat from meat and put in pan and cook pork in the fat together with onion until brown.
When brown, add celery, green pepper, mushrooms, uncooked rice, salt, and stock.
Cover and cook slowly for40 minutes.
Serve hot with chopped parsley garnish.
Coarsely chopped salted almonds arc a delicious addition, if desired.
