Cajun Beans And Barley

Ingredients
  Water 3⁄4 Cup (12 tbs)
  Quick cooking barley 1⁄2 Cup (8 tbs)
  Chopped green sweet pepper 1⁄4 Cup (4 tbs)
  Chopped onion 1⁄4 Cup (4 tbs)
  Canned pinto beans 15 Ounce, drained, rinsed (1 Can)
  Canned stewed tomatoes 14 1⁄2 Ounce (1 Can)
  Frozen whole kernel corn 1 Cup (16 tbs) (Loosely Pack)
  Cajun seasoning/1/2 teaspoon crushed red pepper 1 Teaspoon
Directions

1. In a medium saucepan bring water to boiling. Stir in barley, sweet pepper, and onion. Return to boiling; reduce heat. Simmer, covered, 10 to 12 minutes or till barley is tender and water is absorbed.
2. Stir the beans, tomatoes, corn, and Cajun seasoning or red pepper into the mixture in the saucepan. Cook, covered, over medium heat till bubbly. Cook for 2 to 3 minutes more or till corn is tender.
