Washington Plum Dumplings
|Ground cinnamon/Nutmeg||1⁄4 Teaspoon|
|All purpose flour||2 Cup (32 tbs), sifted|
|Baking powder||2 1⁄4 Teaspoon|
|Butter/Margarine||1⁄3 Cup (5.33 tbs)|
|Milk||2⁄3 Cup (10.67 tbs) (About)|
|Egg white||1 , slightly beaten|
Cut plums into halves and remove stones.
Mix 2 tablespoons sugar and the cinnamon.
Sprinkle on cut sides of plums and put halves back together.
Sift flour, baking powder, salt, and 2 tablespoons sugar.
Cut in butter until mixture looks like coarse meal.
Add milk, mixing until soft dough is formed.
Knead on lightly floured board for 30 seconds.
Roll dough out to 1/4-inch thickness.
Cut into four 4-inch squares.
Put a plum on each square.
Moisten edges of dough and bring corners up over the plums, pressing edges together.
Put in a greased shallow baking pan.
Prick with a fork.
Brush with egg white and sprinkle with sugar.
Bake in preheated moderate oven (350°F.) for about 30 minutes.
Serve plain, or with cream.
