Lima Beans Creole
|Fresh lima beans||3 1⁄2 Cup (56 tbs)|
|Onion||1⁄4 Cup (4 tbs), finely chopped|
|Chopped green pepper||2 Tablespoon|
|Whole tomatoes||16 Ounce, undrained|
1)In a Dutch oven, boil lima beans until tender. Cook beans for approximately 20 to 30 minutes and make sure that beans are tender when done.
2)In a large skillet, cook bacon until they turn crisp.
4)To remaining dripping in skillet, add onion, green pepper and saute.
5)Stir in crumbled bacon and onion mixture into the beans.
6)Add tomatoes, salt, pepper and simmer covered for 15 minutes.
7)A wholesome meal for main course.
