Chicken Breasts Hawaiian
|Egg||1 , slightly beaten|
|Sieved bread crumbs||1 Cup (16 tbs)|
|Fat||2 Cup (32 tbs) (For Frying)|
|Pineapple juice||1 Cup (16 tbs)|
|Lemon juice||2 Tablespoon|
|Curry powder||1⁄4 Teaspoon|
|Slivered almonds||1 Tablespoon|
1)On a board, split the chicken breasts in halves.
2)De-bone them, keeping the meat intact.
3)Dip in the chicken breasts in a beaten egg and roll them on bread crumbs.
4)Sprinkle salt and season them,
5)In a heavy skillet, heat fat which comes up to a ¼ inch. Pan fry the chicken breasts.
6)Remove from heat and drain the fat into a bowl.
7)Add cornstarch, curry powder and sugar to the juices in the skillet and make the gravy.
8)Pout the gravy over the chicken and cover the skillet. Allow it to simmer on low heat for 20 minutes or till it becomes tender.
9)Remove from heat and serve hot.
