Creole Zucchini

Ingredients
  Zucchini 2 Pound
  Green bell pepper 1 Small, chopped
  Onion 1 Small, chopped
  Garlic 1 Clove (5 gm), minced
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Tomatoes 4 , chopped (Peeled)
  Margarine/Butter 2 Tablespoon
  Minced fresh parsley 2 Tablespoon
Directions

GETTING READY
1.Cut zucchini into slices of 1/4 inches.

MAKING
2.In a slow cooker, put zucchini, bell pepper, onion, garlic, salt and pepper.
3.Add chopped tomatoes and margarine or butter to the cooker.
4.Place the cooker on HIGH and let the ingredients cook for 2 hours.

SERVING
Garnish with chopped parsley and serve.
