Hawaiian Sweetbread Brochettes

Ingredients
  Sweetbreads 1 Pound
  Salad oil 2 Tablespoon
  Lemon juice 2 Tablespoon
  Salt 1 Teaspoon
  Breadcrumbs 1⁄2 Cup (8 tbs)
  Bacon slices 4
  Pineapple chunks 8
Directions

MAKING
1)In a saucepan, boil salted water.
2)Add in the sweetbreads and simmer for 25 minutes
3)Remove from heat and drain. Let it cool.
4)Peel away the sweetbread membrane and slice into pieces of1 ½ inch in diameter.
5)In a small bowl, mix lemon juice and oil.
6)Dip the sweetbreads in to the lemon-oil and then roll them in salted breadcrumbs.
7)Using a knife, cut bacon into 2 inch pieces
8)On the skewers, alternate pieces of sweetbread with bacon and pineapple.
9)Place the skewers over the grill and broil over hot coals for 10 minutes. Brown the pieces evenly.

SERVING
10)Remove the skewers from the grill and serve immediately.
