Baltimore Dinner Belle
|Dressed frying chicken||3 Pound, cut into pieces|
|Milk||1⁄2 Cup (8 tbs)|
|Cracker crumbs||3⁄4 Cup (12 tbs)|
|Flour||1⁄4 Cup (4 tbs)|
|Corn meal||1 Tablespoon|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Olive oil/Salad oil||1⁄4 Cup (4 tbs)|
1. Clean the chicken pieces and dip first in a egg-milk mixture and roll in a mixture of flour, cracker crumbs, salt, corn meal and paprika.
2. Heat salad oil and butter, add coated chicken and allow to brown evenly.
3. Lower the heat, sprinkle few drops of water.
4. Cook, covering, for half an hour for chicken to turn tender.
5. Serve hot.
