Cracker Jack Cookies
|Corn oil/Margarine||1 Cup (16 tbs), softened|
|Packed light brown sugar||1 Cup (16 tbs)|
|Granulated sugar||1 Cup (16 tbs)|
|Vanilla extract||2 Teaspoon|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1 Teaspoon|
|Rolled oats||2 Cup (32 tbs)|
|Crispy rice cereal||2 Cup (32 tbs)|
|Coconut||1 Cup (16 tbs), flaked|
Preheat oven to 350 degrees.
In a large mixer bowl cream margarine, brown sugar and granulated sugar until light and fluffy.
Add eggs and vanilla; mix well.
In a small bowl combine flour, baking powder, baking soda and salt; mix lightly.
To the creamed mixture add dry ingredients; mix well.
Stir in oats, cereal and coconut.
Grease cookie sheets or use nonstick cookie sheets.
Onto the prepared cookie sheets drop dough by teaspoon-fuls.
Bake for 10 to 12 minutes or until brown.
