Chicken Okra Gumbo

Ingredients
  Butter 2 Tablespoon
  Chicken 3 1⁄2 Pound, cut into pieces (1 Whole)
  Ham slices 2 Pound, cut into 1 inch cubes
  Onion 1 , chopped
  Hot red pepper 1⁄2 , seeded
  Thyme sprigs/Parsley sprigs 1 , chopped
  Tomatoes 6 Large, peeled and chopped
  Okra 1 Quart, sliced (1 Pound)
  Boiling water 3 Quart
  Bay leaf 1
  Boiled rice 2 1⁄2 Cup (40 tbs)
  Salt To Taste
  Cayenne pepper To Taste
Directions

1. Heat the butter in a heavy kettle or Dutch oven, add the chicken and ham and cook, covered, about ten minutes.
2. Add the onion, red pepper, thyme and solid part of the tomatoes, reserving the juice. Simmer a few minutes, stirring often.
3. Add the okra and simmer, stirring, until brown.
4. Add the reserved tomato juice, the boiling water and bay leaf. Season with salt and cayenne and simmer, covered, about one hour.
