Hawaiian Island Chicken
|Chicken||3 Pound, cut into serving pieces|
|Soy sauce||2 Tablespoon|
|Ground ginger||1⁄4 Teaspoon|
|Green pepper||1 , cut in to chunks|
|Canned mandarin oranges||11 Ounce, drained and reserve syrup (1 Can)|
|Canned pineapple slices||8 1⁄4 Ounce, drained and halved, reserve syrup (1 Can)|
Set Power Select at HIGH.
In oblong baking dish, arrange chicken, meatier portions toward edge of dish; brush with soy sauce blended with ginger.
Add green pepper; heat, covered with wax paper, 13 to 15 minutes; drain.
Let stand, covered, 7 minutes.
Meanwhile, in 2-cup glass measure, blend cornstarch with 1 cup reserved syrups.
Heat 2 minutes, stirring once.
Add fruit and pour over chicken; if necessary, heat 3 to 4 minutes.
